Yesterday I made the most delicious lunch for myself and my family. It was so tasty and also so simple too that I just had to share the recipe with you guys! Fashion is definitely my number one passion in life but I also have a big interest in food and nutrition and I am interested in spending a bit more of my time cooking and blogging about food. I always think that when I am older and looking for a new challenge in life that I would like to open a cafe or bakery serving healthy, homemade food. Avocados are one of my favourite foods at the moment as they are just so versatile. My favourite ways of including them in my diet are like in this recipe served on toast or in a salad, I even eat them as an afternoon snack on their own. Whatever way you like to eat them I definitely recommend that you include them in your diet. Let me know what you think about me including some recipes on my blog. That’s all for today. 3 Tbsp. minced fresh chives
2 Tbsp. crème fraîche (optional)
6 large eggs
2 Tbsp. unsalted butter
Salt & freshly ground black pepper
4 large or 8 small slices sourdough, whole wheat, or pumpernickel bread, toasted
1 avocado, halved, pitted, peeled, and diced
1 Tbsp. fresh lemon juice
4 oz. thinly sliced smoked salmon
Whisk 2 Tbsp. chives, crème fraîche (if using), and eggs in a large bowl. Melt butter in a large heavy nonstick skillet over medium-low heat. Add egg mixture and season with salt and pepper. Cook, occasionally scraping bottom of skillet with a heatproof spatula to form large, soft curds, until just barely set, 3-4 minutes. Set aside.
Place 2 slices toast on each plate. Put avocado into a bowl, mash with a fork, and season with lemon juice, salt, and pepper. Spread mashed avocado over each slice of toast. Spoon eggs over avocado. Drape salmon slices over eggs, garnish with remaining 1 Tbsp. chives, and season to taste with pepper.
